Menus & Nature Walks

I am back!  I took a short leave from blogging to concentrate on my pregnancy and my family!  I have a lot to share and a lot of new fresh ideas for the blog, so stayed tuned!

The sun is here, even in Oregon when it feels like rain is an everyday occurrence!  I absolutely love being outside, so I have been getting out every time there is a break in the rain.  We have had quite a few nice days and I am taking full advantage of it with lots of walks.  The perfect exercise for pregnant mama.  My son and I went for a little hike along a river trail in one of our local parks, which my son calls the "exploring park".  I think we walked about 4 or 5 miles!  It felt so good to walk that much, to enjoy the fresh air, and explore our outside world.  My son was on a full search to find.....a butterfly, fish, pig, duck, and spider.  We looked very hard for all five of these earth creatures but only found a duck and a spider.  That is okay though, we will find the others on another adventure.  It was a blast. And here is my menu for this week.  From now on I plan to post my menus on Mondays.  That is a "plan" and sometimes plans change...but I am shooting for every Monday!  Even without my menus being posted on this blog...I still manage to continue menu planning.  It really works so well for our family that if I don't menu plan for just one week, things just go haywire!  I am so elated that the growing season is here and that my recipes can include more of our favorite fruits and vegetables that are now in season!  As usual, we strive to eat our food as organic, local, and sustainable as we can!

MENU:

MONDAY-  Whole wheat spaghetti with homemade tomato and veggie sauce

TUESDAY-  Homemade pizza with homemade pizza crust and kale chips (recipe to follow).

WEDNESDAY-  Orzo & Broccoli Pesto Salad with shrimp skewers

THURSDAY-  Black bean burgers and grilled zucchini and pineapple

FRIDAY-  Dinner at a good friend's home!

SATURDAY-  Salmon Chowder and fresh green salad

SUNDAY-  Leftover soup and veggie sandwiches!

  2. These last few days have been absolutely amazing! I don't want it to ever change! :) Us Oregonians love the sun more than anyone else, I think!

    Beautiful pics.
